Baked Oats Recipe

This baked oats recipe feels like eating dessert for breakfast, but with whole grains, eggs, and natural sweetness, they are healthy and filling!

Ingredients

  • 1 cup rolled oats or old-fashioned oats
  • 2 bananas small and ripe
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 tablespoon maple syrup
  • pinch of salt
  • toppings if desired

Instructions

  1. Preheat oven to 350. Place all ingredients (except toppings) in blender.
  2. Blend until smooth, about 1 minute.
  3. Spray ramekins (or other oven-safe dish) with cooking spray. Pour into ramekins. Add toppings if desired.
  4. Bake for 20-25 minutes, or until a toothpick inserted in the middle comes out mostly clean with just a few crumbs.
