Ingredients

  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup tomato sauce (canned is fine)
  • 1 cup mozzarella cheese shredded
  • ½ cup Parmesan Cheese grated
  • 1 teaspoon dried basil
  • salt and pepper to taste

  1. Preheat the oven to 375°F. In a skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
  2. Stir in the orzo and cook for 2 minutes, then add vegetable broth and tomato sauce. Bring to a simmer.
  3. Transfer the orzo mixture to a casserole dish. Sprinkle with mozzarella and Parmesan cheese. Season with basil, salt, and pepper.
  4. Bake in the preheated oven for 20 minutes, or until the orzo is tender and the cheese is bubbly and golden.
