Ingredients

  • 15 ounce can artichoke hearts , drained and chopped
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup mayonnaise
  • 3 cloves garlic , minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 boneless skinless chicken breast , halved and trimmed down in size to match

Instructions

  1. Preheat oven to 375 degrees.
  2. In a medium bowl, mix together the artichoke hearts, Parmesan cheese, mayonnaise, garlic, salt, and pepper.
  3. Place chicken in a greased baking dish, and cover evenly with artichoke mixture.
  4. Bake, uncovered, for 30 minutes or until chicken is no longer pink in the center and juices run clear.
