BAKED PEARS WITH FETA, HONEY, AND CRANBERRIES

Ingredients

  • 4 pear halved and cored, ripe
  • ½ cup feta cheese crumbled
  • ¼ cup cranberries fresh or dried
  • 2 tablespoon honey
  • 1 tablespoon olive oil
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • salt to taste
  • black pepper to taste
  • rosemary optional, for garnish, or thyme, fresh

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the pear halves cut side up on a baking sheet lined with parchment paper. Drizzle the pears with olive oil and sprinkle with cinnamon, nutmeg, salt, and pepper.
  3. Roast the pears in the preheated oven for 20-25 minutes, or until tender and slightly caramelized around the edges.
  4. In the last 5 minutes of baking, sprinkle the crumbled feta and cranberries over the pears.
  5. Drizzle the honey over the pears once they are out of the oven.
  6. Garnish with fresh rosemary or thyme, if desired. Serve warm.

Notes

  • You can use blue cheese or goat cheese instead of feta for a different flavor profile.
  • For an extra crunch, sprinkle chopped pecans or walnuts over the pears before baking.
  • If using fresh cranberries, you can toss them with a little sugar before placing them on the pears to balance the tartness.
  • To make this dish more indulgent, add a dollop of whipped cream or a scoop of vanilla ice cream on top when serving.
  • Leftovers can be stored in the fridge for 1-2 days. Simply reheat gently in the oven or microwave before serving.
