Cup of Yum
Make the topping
- In a small bowl, stir together breadcrumbs, blue cheese, parsley or green onions, seasoned salt, and cracked black pepper.
- Add the olive oil and mix until the mixture has a stuffing-like consistency. Set aside.
Prepare the pork chops
- Season both sides of the pork chops with salt and pepper.
- Press the crumb mixture evenly over the top of each pork chop, gently patting it down to adhere.
Cook the pork chops
- Preheat the oven to 400°F and add olive oil to an oven-safe skillet.
- Bake for 6-8 minutes, or until the internal temperature reaches 145°F.
Optional
- Switch the oven to broil and cook for a couple of minutes until the topping is golden brown and the cheese starts to melt. Watch carefully to avoid burning!
- Remove from the oven and let the pork chops rest for 5 minutes before serving.
Notes
- Pork chops. Boneless pork chops that are about an inch thick cook fastest. Thicker chops, and bone-in chops will take longer to cook, and extra few minutes.
- Topping. Add some grated parmesan cheese to the bread crumb topping for an extra kick of cheesy flavor.
- Skillet. If you don't have an oven proof skillet, no problem. Just pan fry in a regular skillet, then transfer the chops to a baking dish or baking sheet before putting in the oven.
- What temperature to cook Pork?
- Pork chops should be cooked to 145 degrees F when tested with a digital thermometer in the thickest part.
- If your pork chops are extra thick, you may need to bake them a few minutes longer.
- Broil carefully – the topping can burn quickly!
- Let the pork chops rest before cutting to keep them juicy.
