Ingredients

  • 4 potatoes russet, sweet, or white
  • 2 tablespoon cooking oil
  • salt & pepper
  • 4 tablespoon salted butter
  • 1 cup sour cream
  • 1 cup cheddar cheese
  • 1/2 cup feta cheese
  • 1/4 cup fresh chives
  • 1 cup sliced mushrooms
  • 6 slices Bacon
  • 1 cup cherry tomatoes
  • 1 avocado
  • 1 cup chili

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Wash the potatoes thoroughly and pat them dry.
  2. Pierce the potatoes with a fork several times. This allows steam to escape during baking.
  3. Rub the potatoes with cooking oil, then season generously with salt and pepper.
  4. Place the potatoes on a baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork.
  5. While the potatoes are baking, prepare your toppings: slice the butter, grate the cheese, chop the chives, sauté the mushrooms, cook and crumble the bacon, halve the tomatoes, slice the avocado, and heat the chili.
  6. Once the potatoes are done, let them cool for a few minutes, then slice them open and fluff the insides with a fork.
  7. Set up your toppings bar: arrange the toppings in separate bowls and invite your guests to customize their potatoes.
  8. DEVOUR!
