Ingredients

  • 70 g (2.5oz) plain flour
  • 120 ml (0.5 cup) milk
  • 3 eggs
  • 3 tbsp pumpkin puree
  • 1 tsp vanilla
  • 1 tsp ground cinnamon or pumpkin pie spice
  • 1 tsp melted butter

Instructions

  1. Preheat oven to fan-assisted 190C / 210C / 425F / gas 7 and let the pan heat up in the oven.
  2. Add all the ingredients for the pancake into a blender and blend into a smooth batter.
  3. Transfer the batter into the preheated oven ready pan and bake for 20-25 mins until the pancake is golden and puffed.
  4. Quarter the pancake and serve.
  5. Serves 2 (hungry bunnies) to four people.
