Baked ripe plantains with cheese
Baked ripe plantains stuffed with melted mozzarella cheese yield a soft, sweet, and creamy dish that blends the natural caramelized flavor of plantains with the mild stretchiness of melted cheese. Butter or oil brushed on the peeled plantains helps achieve a golden crust as they bake at a high temperature. Making a slit to stuff thick mozzarella slices allows the cheese to heat through and blend with the plantain's sweetness. Optional hot sauce garnishes add a spicy contrast.
Ingredients
- 6 plantain whole, ripe
- 1-2 tbs butter use as little as you want, melted or oil
- 6 mozzarella cheese thick slices
Optional garnish:
- aji criollo hot sauce or cilantro hot sauce
Instructions
- Pre-heat oven to 400 F
- Peel the plantains, place them on a baking sheet and rub them with butter or oil.
- Bake the plantains for 30 minutes, then turn each one and bake for another 15-20 minutes or until golden on both sides.
- Remove the plantains from the oven, made a horizontal slit on the middle of each plantain, and stuff them with the cheese slices.
- In a few minutes the cheese will have melted, serve immediately, with or without hot sauce.
