Ingredients

For the potatoes
  • 6 medium potato red skin variety
  • 1 tbsp rosemary leaves finely chopped fresh
  • ½ tbsp paprika
  • ½ tsp salt
  • 2 tbsp olive oil
For the dipping sauce
  • ¼ cup PLAIN yogurt regular
  • ¼ cup mayonnaise
  • ½ tsp paprika
  • 1 garlic clove, minced

Instructions

The potatoes

  1. Preheat the oven to 425F.
  2. Peel the potatoes and cut into ½ thick pieces.
  3. Add the rest of the ingredients to the potatoes and mix well.
  4. Line a large baking sheet with a silicon mat or parchment paper. Arrange the potatoes on top in a single layer.
  5. Bake for 35-40 minutes until the potatoes are browned and baked through.
The dipping sauce
  1. While potatoes are baking, prepare the dipping sauce by mixing all the ingredients together. Keep in the refrigerator until ready to serve.
