Ingredients
- 2 pound salmon filet
- 3 cloves garlic minced
- Zest and juice of 1 lemon
- 2 tablespoons butter melted
- 1 tablespoon capers
- 2 teaspoons fresh dill
- salt and pepper to taste
Instructions
- Preheat oven to 375F.
- Add the garlic, lemon juice, lemon zest, melted butter, salt and pepper to a small mixing bowl, whisk together and set aside.
- Place the salmon skin side down on a baking sheet lined with aluminum foil, that’s been sprayed with nonstick spray. Pour the mixture over the top and brush to make sure all the salmon is coated with it. Add the capers and dill on top, then seal up all ends of the foil. Bake for 20-25 minutes or until the salmon is cooked through.
- Carefully open the foil away from you, so that the steam will not be near your hands or face. Garnish with more dill and slices of fresh lemon over the top.
