Baked Salmon with Ginger Scallion Sauce

Salmon with ginger scallion sauce is easy to make and bursting with zingy flavor! Inspired by Cantonese cuisine, enjoy over noodles or rice.

Ingredients

  • 4 salmon filets 6 ounces each, bones removed
  • 2 tbsp vegetable oil
  • 1/2 tsp kosher salt
  • 1/4 tsp white pepper
Ginger Scallion Sauce
  • 6- inch piece of ginger
  • 10 green onions scallions
  • 3 tbsp vegetable oil
  • 1 tsp sesame oil
  • 2 tsp sugar
  • 1 tsp kosher salt

Instructions

  1. Preheat oven to 400°F.
  2. Use a teaspoon and scrape the thin skin off the ginger root. Using a sharp knife, slice the ginger into thin pieces. Stack the slices and make julienne slices, then turn and cut into fine dice. Set aside.
  3. Cut the white part of the onion into thin pieces. Do the same with the green. Add the white to the ginger and set the green aside.
  4. Rub the oil over each salmon filet and season each with the salt and white pepper. Place skin side down in a oven proof skillet coated with cooking spray or oil.
  5. Bake for 12-15 minutes until salmon is opaque and flaky when pulled apart with a fork. You can also broil the last 1-2 minutes if desired for a crispy top.
  6. While salmon is baking heat 3 tablespoons of vegetable oil in a small skillet. Add the diced ginger and scallion mixture. Stir for 30 seconds, turn off heat and add the sesame oil, sugar and salt. Stir and add the diced green onion tops. Stir again to mix and spoon over baked salmon filets.
