Baked Scallops with Ritz Crackers

Scallops baked with a buttery cracker topping are incredibly delicious.

Ingredients

  • 2 pounds sea scallops
  • salt and pepper to taste
  • 1 tablespoon fresh thyme leaves minced
  • 1/2 cup buttermilk
  • 20 Ritz crackers hand crushed
  • 1/4 cup butter melted
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F.
  2. In a bowl, season the scallops with salt and pepper. Add the thyme and buttermilk and toss to coat.
  3. Place the scallops in an oven-proof casserole dish and cover with the hand-crushed Ritz Crackers.
  4. Top with the melted butter and bake for 20 minutes.
  5. Squeeze lemon juice over the scallops and serve immediately.
