Baked Tex-Mex Spaghetti

A super delicious creamy baked spaghetti that is loaded with meat and cheese. This will be a new family favorite.

Ingredients

  • ¾ pound ground turkey or lean ground beef
  • ½ cup finely chopped onion
  • 4 tablespoons unsalted butter
  • ½ cup all-purpose flour
  • 1 ½ cup milk
  • 2 (8-ounce) cans tomato sauce
  • 1 (10-ounce) can diced tomatoes and green chiles, undrained
  • 1 (8-ounce) package grated cheddar cheese
  • 1 (8-ounce) package grated pepper Jack cheese
  • 2 tablespoon fresh chopped cilantro
  • 1 tablespoon ground cumin
  • 2 teaspoon chili powder
  • ½ teaspoon salt
  • 16 ounces angel hair pasta

Instructions

  1. Preheat oven to 350 degrees. Spray a 9x13-inch casserole dish with cooking spray. Cook 16 ounces angel hair pasta according to package directions for al dente; drain and set aside.
  2. While the pasta cooks, brown the ¾ pound ground turkey or lean ground beef in a large skillet over medium heat. When meat is almost cooked through, add the ½ cup finely chopped onion and saute until tender and the meat is cooked through.
  3. Remove the meat from the skillet and set aside. In the same skillet, melt 4 tablespoons unsalted butter over medium heat. Gradually whisk in the ½ cup all-purpose flour until a paste forms and cook for 2 minutes, whisking frequently.
  4. Slowly whisk in the 1 ½ cup milk until thickened. Add the 2 (8-ounce) cans tomato sauce and 1 (10-ounce) can diced tomatoes and green chiles, Continue cooking, stirring occasionally until the mixture is thick and creamy.
  5. Stir in the meat mixture, 1 (8-ounce) package grated cheddar cheese, 1 cup of the 1 (8-ounce) package grated pepper Jack cheese, 2 tablespoon fresh chopped cilantro, 1 tablespoon ground cumin, 2 teaspoon chili powder, and ½ teaspoon salt. In a large bowl, combine the cooked pasta and sauce mixture and stir until all pasta is evenly coated with sauce.
  6. Pour the mixture into the prepared baking dish, cover with foil, and bake for 30 minutes. Remove from oven and top with remaining Pepper Jack cheese and return to oven, uncovered, for another 5 minutes or until cheese is melted and bubbly.
  7. Remove the casserole from the oven and let stand a few minutes before serving, then slice and garnish with desired toppings .
