Bakery-Style Chocolate Chip Cookies

Ingredients

  • 1 cup unsalted butter , softened
  • 1/2 cup sugar
  • 3/4 cup brown sugar , packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semisweet chocolate chips , divided

Instructions

  1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper and set aside.
  2. To your stand mixer add the butter, sugar, and brown sugar on medium speed until light and creamy.
  3. Add in egg and vanilla extract until well mixed.
  4. Sift together flour, baking soda, and salt.
  5. Add dry ingredients to stand mixer slowly on the lowest speed setting.
  6. Fold in 1 cup of chocolate chips.
  7. Using an ice cream scoop (or 1/4 cup measure), scoop the cookie dough onto a baking sheet 2" apart.
  8. Place the remaining chocolate chips onto the cookie scoops all over just before baking.
  9. Bake for 13-15 minutes.
  10. Use a large biscuit cutter to place over the cookies and swirl around to round the cookies out while still warm.
  11. Let cool for 5 minutes before removing from pan.
