Ingredients
- 7 oz red peppers , seeded
- 8 shallots , cut into 4
- 4 cloves garlic , peeled
- 4 green Padi peppers or Jalapeño (or more or less depending on the desired heat)
- 2 tomatoes , peeled, seeded and diced
- 3 kaffir lime leaves
- 3 tablespoons chopped lemongrass
- 1 tbsp fresh turmeric , peeled and chopped
- 3 tablespoons coconut oil , or palm oil
- 3 tablespoons water
- 1 tablespoon lime juice
- 2 teaspoons sugar
- 1 teaspoon salt

Instructions
- Crush the shallots, red peppers, green Padi peppers, garlic, turmeric in a mortar until a thick paste is obtained.
- Add half of the chopped lemongrass and mix.
- In a frying pan or wok, heat the chosen oil over medium heat then add the chili paste.
- Stir fry for 1 minute.
- Add the kaffir lime leaves and the rest of the lemongrass, and fry for 5 minutes, stirring constantly.
- Add the tomatoes, water, sugar and salt. Mix.
- Fry for 2 minutes.
- Add the lime juice and stir constantly over medium-low heat until the tomato is melted and all of the liquid is reduced.
- Adjust the seasoning and add more sugar or salt if necessary. Mix and remove from heat.
