Balsamic Berries

Fresh berries macerated in a sweet-tart mixture of balsamic vinegar and sugar, topped with lightly sweetened yogurt or crème fraiche. Easy, all-natural summer dessert.

Ingredients

  • 10 ounces strawberry about 12 medium berries
  • 6 ounces raspberry
  • 6 ounces blackberry
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey divided - or more if needed (depending on tartness of berries - use agave or sugar for vegan, lavender
  • ¼ teaspoon black pepper freshly ground
  • 7 ounces crème fraîche you can alternatively use a dairy-free yogurt or dairy free vanilla ice cream to make this vegan, or whole milk Greek yogurt
  • ¼ teaspoon vanilla bean paste
  • 1/8 teaspoon cinnamon

Instructions

  1. Wash and gently pat berries dry. Remove stems from strawberries, hull, and quarter. Place all the berries in a medium bowl.
  2. Drizzle balsamic vinegar, 1 tablespoon of honey, and black pepper over the berries. Add more honey as needed (if your berries are on the tart side). Gently fold to mix, then let stand at room temperature for 30 minutes. Berries can be covered and refrigerated for up to 60 minutes, but no longer, or the berries will become too soft.
  3. While berries stand, mix crème fraiche or yogurt with the remaining tablespoon of honey, vanilla bean paste, and cinnamon until well combined. Refrigerate until ready to serve.
  4. To serve, divide berries into serving dishes and place a dollop of the sweetened crème fraiche or yogurt over the top. Enjoy immediately.

Notes

  • You will also need: Mixing bowl
  • Serves 4 (30 ounces total – 7.5 ounces total per serving) - calories calculated using whole fat Greek yogurt as a topping.
  • Note: Firm, sweet berries are best here. Berries that are too ripe will become mushy. Do not let the berries macerate for longer than 1 hour or you risk mushy berries. This recipe calls for either crème fraiche or whole milk Greek yogurt. Crème fraiche can sometimes be a little difficult to find, but Greek yogurt is usually available in your typical grocery store. Taste the topping and swirl in a little extra honey if you like. It is a matter of taste, but 1 tablespoon worked for us and let the sweet yet tangy flavor of the berries shine. If you prefer, you can swap the crème fraiche or yogurt for vanilla ice cream, or a dairy free topping like vegan ice cream. A little dusting of cinnamon and a drizzle of honey over the top will help enhance the flavor and look if you choose to use ice cream. Other toppings you could consider are toasted and chopped almonds, pecans, or walnuts. If making for Passover, be sure to use ingredients that are certified kosher for Passover.
