Balsamic, Garlic, and Basil Marinated Chicken Breasts

Ingredients

  • ¼ cup of olive oil
  • ¼ cup of balsamic vinegar
  • 2 cloves of garlic minced
  • 1 tbsp fresh basil
  • Sea Salt and Freshly Cracked Pepper to taste
  • 4 skinless boneless chicken breasts trimmed of excess fat

Instructions

  1. Combine the olive oil, balsamic vinegar, garlic, basil, sea salt, and freshly cracked pepper, to taste, together in a large zip-lock bag.  Mix until well combined, add the chicken breasts, seal, and place in the refrigerator for 2-24 hours.
  2. Remove the chicken from the refrigerator 20 minutes before grilling.
  3. Coat the grill rack with cooking spray then heat on high or heat a grill pan over medium-high heat.  
  4. Season both sides of the chicken with sea salt and freshly cracked pepper, to taste, and place the chicken on the grill to cook for 4-6 minutes per side, or until cooked through and the juices run clear.  
  5. Let the chicken rest for 5-7 minutes before slicing and serving with more chopped basil sprinkled on top.  Enjoy.
