Ingredients

  • ½ cup balsamic vinegar
  • 2 tablespoons herb seasoning blend
  • ½ cup olive oil
  • 2 pounds boneless pork tenderloin

Instructions

    Cup of Yum
  1. Whisk together the balsamic vinegar and herb seasoning in a small bowl until the seasoning is fully dissolved. Gradually whisk in the olive oil to create the marinade.
  2. Place the pork tenderloin in a resealable plastic bag and pour the marinade over the meat. Press out excess air and seal the bag, then turn to coat. Refrigerate for at least 2 hours, or overnight for deeper flavor.
  3. Preheat your oven to 350°F. Transfer the marinated pork tenderloin and all of the marinade into a high-rimmed baking dish, such as a casserole pan.
  4. Roast the pork tenderloin in the oven, basting with the marinade occasionally, until it reaches an internal temperature of 145°F, which typically takes about 1 hour.
  5. Remove the pork tenderloin from the oven and let it rest for 10 minutes. Slice and serve.
