Ingredients

For the Steak Tips:
  • 1½ pounds sirloin steak cut into 2-inch pieces
  • ¼ cup balsamic vinegar
  • 2 tablespoons soy sauce low sodium
  • 2 cloves garlic minced
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • ½ teaspoon ground black pepper
For the Veggies:
  • 1 pound baby potatoes halved
  • 1 bunch asparagus trimmed
  • 1 medium red bell pepper cut into chunks
  • 1 medium green bell pepper cut into chunks
  • 1 medium red onion cut into wedges
  • 2 tablespoons olive oil
  • salt and pepper to taste

  1. In a mixing bowl, whisk together balsamic vinegar, soy sauce, garlic, honey, Dijon mustard, and black pepper. Add the steak tips to the marinade, ensuring each piece is coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  2. Preheat your oven to 425°F (220°C).
  3. In a large bowl, toss the halved baby potatoes, asparagus, bell peppers, and red onion with olive oil, salt, and pepper until well coated.
  4. Remove the steak tips from the marinade and place them on one side of a large baking sheet. Arrange the seasoned veggies on the other side of the baking sheet in an even layer.
  5. Place the sheet pan in the oven and roast for about 10 minutes. Flip the steak tips and stir the veggies for even cooking. Continue to roast for another 10-15 minutes or until the steak tips reach your desired level of doneness and the veggies are tender and caramelized.
  6. Serve the balsamic glazed steak tips and veggies hot from the oven.
