Balsamic Grilled Chicken

Ingredients

  • 1 tbsp extra virgin olive oil
  • 2 tbsp good balsamic vinegar
  • 2 tsp dried parsley
  • 1 tsp dried thyme
  • 2 garlic cloves minced
  • 3-4 boneless chicken breast skinless chicken breast halves
  • kosher salt

Instructions

  1. Combine the first five ingredients in a plastic bag or bowl to make a marinade.
  2. Season both sides of the chicken breasts with kosher salt and place them in the marinade.
  3. Marinade for at least 20 minutes.
  4. Preheat the oven to 375°. Once preheated, heat the grill pan over high heat.
  5. Grill the top side of the chicken breasts over high heat for 3 minutes, or until the chicken breasts are marked.
  6. Flip the chicken breasts and transfer them to the oven to finish cooking, for about 20 minutes.
  7. Remove the chicken from the oven and let them rest for 3 minutes before serving to allow the juices to redistribute.
