Balsamic Pork Chops and Veggies
Balsamic pork chops are a quick one-pan meal that is packed with flavor and color! This family friendly main dish paris well with any side, it's delicious!

Ingredients
- 2 tablespoons olive oil
- 5-6 pork chops thin cut , see note
- ½ yellow bell pepper sliced thin
- ½ green bell pepper sliced thin
- ½ cup cherry tomatoes whole
- ¼ cup mushrooms sliced thin
- 4 garlic cloves crushed
- 2 tablespoons balsamic vinegar see note
- ¾ cup beef or chicken or vegetable broth
- 2 tablespoons butter cold
- salt and pepper to taste
- 2 teaspoons fresh parsley chopped
- 2 teaspoons fresh basil chopped
Instructions
- In a large skillet over medium high heat, heat oil until just smoking.
- Place pork chops in a single layer and brown on both sides. Remove and set aside.
- Add vegetables to the pan and saute until starting to brown, about 3 minutes. Set aside with the pork chops.
- Add balsamic vinegar and beef broth, scraping the bottom of the pan.
- Add salt and pepper.
- Bring to a boil and add the pork chops and vegetables back into the pan.
- Simmer on medium low for about 5-7 minutes, until the sauce has reduced and thickened and the pork chops are cooked through (165 degrees F), (see note).
- Add the cold butter into the pan, tossing the vegetables and meat gently to combine it with the sauce.
- Sprinkle with fresh parsley and basil.

Notes
- Regular balsamic can be used, or you can substitute in a flavored balsamic like honey balsamic. If you are unsure how potent your balsamic vinegar is, add 1 tablespoon, taste, and adjust from there. I find different brands of balsamic vinegar vary greatly in taste and potency.
- If your liquid starts to evaporate too quickly but the pork chops are not cooked through yet, add more beef broth to the pan.
