Ingredients

  • 14.4 ounces frozen pearl onions
  • 1 tablespoon unsalted butter , divided
  • 1 tablespoon light brown sugar
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 3-4 tablespoons low sodium vegetable broth
  • 1/4 teaspoon coarse kosher salt
  • 1/8 teaspoon ground black pepper
  • fresh parsley , chopped and optional

Instructions

    Cup of Yum
  1. In a large skillet, melt 1/2 tablespoon of the butter over medium heat. Add the onions, stirring and cooking for 15 minutes.
  2. In a small bowl, whisk together the balsamic vinegar and Dijon mustard. Set aside.
  3. Stir in the brown sugar until fully coated. Stir in the vinegar mixture. Cover and reduce the heat. Cook for another 15-20 minutes, stirring occasionally. If the onions get too dry, add 1 tablespoon of vegetable broth. You may not need the whole amount of broth.
  4. Remove from the heat and stir in the remaining 1/2 tablespoon of butter, salt and pepper. Garnish with chopped parsley. Serve hot.
