Bamboo and Beef Stir Fry (Măng Xào Thịt Bò)
Bamboo shoots are a common ingredient used in Asian stir fries. The fresh shoots lend a subtle earthy flavor to any dish.
Ingredients
- 3 bamboo shoots about 1 lb, fresh
- ½ lb beef sliced
- 1 clove garlic minced
- 1 shallot minced
- 1 tablespoon fish sauce
- salt to taste
- black pepper to taste
- ½ bunch cilantro optional, chopped
- 1 tablespoon neutral oil like canola
Instructions
- Marinate the beef with fish sauce, garlic, shallot, salt and pepper
- Slice the bamboo shoots into long pieces by cutting in half and then slicing lengthwise
- Brown the sliced beef in a pan with oil on medium high heat
- When most of the red has disappeared in the meat, add the bamboo and continue to stir well and cook for about 10 minutes,
- Turn off heat, add chopped cilantro and use the residual heat to wilt
Notes
- If you don't like cilantro, you can leave it out or substitute parsley and scallions.
