Ingredients

For the Banana Bars
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon kosher salt
  • 1/2 cup butter softened, unsalted
  • 1 cup granulated sugar
  • 2 egg room temperature, large
  • 1/2 cup Greek yogurt vanilla flavor
  • 1 teaspoon vanilla extract
  • 1 1/2 cups banana about 3 medium bananas, mashed ripe
For the Cream Cheese Frosting
  • 8 ounces cream cheese softened, (regular or low fat)
  • 1/2 cup butter softened
  • 2-3 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon optional
  • 1 tablespoon heavy cream

Instructions

Make the Banana Bars

  1. Preheat the oven to 350 degrees F. Lightly spray a 15-inch jelly rollpan with baking spray and set aside.
  2. In a small mixing bowl, whisk together flour, baking soda, and salt; set aside.
  3. In a separate large bowl, cream butter and sugar until smooth, 2 to 3minutes. Beat in the eggs one at a time, mixing well between each. Add yogurt and vanilla, stirring until combined.
  4. Add the dry ingredients to the wet ingredients, mixing until blended.
  5. Fold in the mashed banana until just combined.
  6. Transfer to the prepared baking pan. Bake for 20 to 25 minutes, until a toothpick inserted in the center comes out clean. Allow the bars to cool in the pan on a wire rack.
Make the Cream Cheese Frosting
  1. In a mixing bowl, beat cream cheese and butter until well combined and fluffy, about 3 minutes.
  2. Add powdered sugar, vanilla, and cinnamon (if using), blending until smooth. Add heavy cream and beat another 2 minutes until fluffy.
  3. Frost bars, slice into squares, and serve.

Notes

  • You can also cut the bars into 16 servings instead of 12.
