Banana Bliss Balls
Wholesome and delicious, these snack balls with satisfy your sweet tooth while keeping you fueled for the day.
Ingredients
- 2 cups quick oats gluten free
- 1 ½ cups California Walnuts
- ⅓ cup coconut oil melted
- 1 banana ripe, mashed
- ¼ cup pure maple syrup
- ¼ teaspoon salt
- ⅓ cup chocolate chips gluten free and vegan if needed
Chocolate Glaze
- 1 teaspoon coconut oil
- ¼ cup chocolate chips
Instructions
- Put all ingredients except chocolate chips into the food processor and pulse a few times until it starts to come together. Stir in chocolate chips. I like them whole or you can pulse them and they will get chopped up.
- Use a medium cookie scoop to make uniform balls, rolling by hand. Warning: it does get a little sticky. Place them on a parchment-lined cookie sheet.
- Freeze for about 30 minutes until they are set.
- Meanwhile, melt the chocolate chips and coconut oil in the microwave checking every 30 seconds and stirring. Drizzle on the Banana Bliss Balls and stick back in the freezer for at least 15 minutes.
- You can store these in the refrigerator or the freezer. They will get too soft if you store them on the counter.
Notes
- This recipe made about 18 balls using a medium cookie scoop.
- One serving is two balls.
- If you are gluten free make sure your oatmeal and chocolate chips are gluten free.
