Banana Bread Baked Oatmeal (Vegan)

This vegan banana bread baked oatmeal is dessert for breakfast at its best! Made with peanut butter and chocolate chips, it's moist, flavourful and ready in around 30 minutes. Also gluten-free.

Ingredients

  • 2 cups gluten-free oats
  • 2 tbsp coconut sugar
  • ½ cup dairy-free chocolate chips
  • ½ tsp salt
  • ½ tsp cinnamon
  • 2 tbsp peanut butter
  • 2 large banana mashed
  • ½ cup vegan yoghurt soy or coconut
  • 2 cups plant-based milk
  • ½ tsp baking powder

Instructions

  1. Preheat the oven to 180 degrees C (350 F).
  2. Add the oats, coconut sugar, chocolate chips, salt, cinnamon, peanut butter, mashed banana, vegan yoghurt, plant based milk and baking powder to a mixing bowl and stir together well.
  3. Transfer the batter to a rectangular baking dish, adding extra banana coins and chocolate chips on top. Bake in the preheated oven for 25 minutes.
