Banana Bread Cookies

Ingredients

  • 1 cup unsalted butter , softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar , packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 medium ripe bananas , mashed
  • 1 cup walnuts , chopped

Instructions

  1. Preheat oven to 375 degrees.
  2. Line baking sheets with parchment or spray with nonstick spray.
  3. To the stand mixer add the butter, sugar and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add in the eggs and vanilla until smooth.
  5. Add in the flour, oatmeal, baking soda, cinnamon, and salt.
  6. On low speed add in the mashed bananas and walnuts until mixed in.
  7. Using a 2 tablespoon cookie scoop, place 8 cookies on each sheet.
  8. Bake for 11-13 minutes or until the edges are browned and cookies are set.
