Banana Bread Energy Balls
These Banana Bread Energy Balls combine rolled oats, nuts, and mashed banana to create bite-sized snacks with a slight chew and natural sweetness from maple syrup and banana. Blended until slightly smooth but still textured, these energy balls hold together well after chilling. The cinnamon adds a warm spice note, making these balls a practical option for quick energy or a wholesome treat without baking.
Ingredients
- 2 cups rolled oats old fashioned
- 1/2 cup banana from one medium banana, mashed
- 1/2 cup almonds
- 1/2 cup pecans
- 1/3 cup maple syrup
- 1 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Add all the ingredients to a food processor and pulse the mixture for 10 seconds. Scrape down the sides, then blend again until the mixture is fairly smooth, with a slight bit of texture. The dough will likely start to roll around the food processor when it's blended enough.
- Scoop a ball using a medium cookie scoop and roll it in between your hands. Then place it on a parchment lined plate or baking tray. Continue this process until you've used up all the dough.
- Chill the balls for 30 minutes to firm up, then enjoy!
Notes
- If balls do not hold together well, pulse the mixture again in the food processor for a finer texture.
- After rolling, the balls may feel soft but will firm up as the oats absorb the maple syrup during chilling.
- Using a medium cookie scoop helps form uniform-sized balls for even chilling and serving.
