Banana bread recipe. The toasting kind
This is a real banana bread. the kind you get in cafes toasted and smothered in butter

Ingredients
- 125 gm butter softened
- 180 gm brown sugar 1 cup
- 80 gm golden syrup or honey | 1/4 cup
- 420 gm bananas 4 large or 6 small | 2 cups
- 2 eggs extra large, beaten
- 260 gm flour plain, 1 3/4 cups
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon optional
- 2 tablespoons pepita seeds
Instructions
- Set the oven to 160C. Line a loaf tine approx. 10 x 21 cm (4 x 9 in)
- Mash the banana and measure out 420gm (2 cups). Set aside
- Sift together the flour, baking powder, cinnamon and baking soda.
- Cream the butter brown sugar and golden syrup till light and creamy. Add the eggs one at a time and mix. The mixture may look curdled between additions if so add a Tablespoon of the flour mixture.
- Add the bananas to the egg mixture and add the flour and mix till only just combined.
- Spoon into the loaf tin and bake for up to 60 minutes or until a skewer comes out clean

Notes
- This loaf cooks on a low slow temperature.
- Don't overmix the batter or it will become tough
- I have been told by a reader that she substituted gluten free flour for the all purpose flour and the loaf baked up very successfully
