Banana bread recipe. The toasting kind

This is a real banana bread. the kind you get in cafes toasted and smothered in butter

Ingredients

  • 125 gm butter softened
  • 180 gm brown sugar 1 cup
  • 80 gm golden syrup or honey | 1/4 cup
  • 420 gm bananas 4 large or 6 small | 2 cups
  • 2 eggs extra large, beaten
  • 260 gm flour plain, 1 3/4 cups
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon optional
  • 2 tablespoons pepita seeds

  1. Set the oven to 160C. Line a loaf tine approx. 10 x 21 cm (4 x 9 in)
  2. Mash the banana and measure out 420gm (2 cups). Set aside
  3. Sift together the flour, baking powder, cinnamon and baking soda.
  4. Cream the butter brown sugar and golden syrup till light and creamy. Add the eggs one at a time and mix. The mixture may look curdled between additions if so add a Tablespoon of the flour mixture.
  5. Add the bananas to the egg mixture and add the flour and mix till only just combined.
  6. Spoon into the loaf tin and bake for up to 60 minutes or until a skewer comes out clean

Notes

  • This loaf cooks on a low slow temperature.
  • Don't overmix the batter or it will become tough
  • I have been told by a reader that she substituted gluten free flour for the all purpose flour and the loaf baked up very successfully
