Banana Bread with Chocolate Chips

Ingredients

  • 1⅓ cup plain flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅓ cup unsalted butter, softened
  • ⅔ cup sugar
  • 1 whole egg
  • 1 egg yolk
  • 2 small ripe bananas, mashed (or 1 large)
  • ⅓ cup chocolate chips
  • small banana and handful of chocolate chips for decoration (optional)

  1. Preheat your oven to 325°F (165C/150C Fan). Grease and flour a standard sized loaf pan.
  2. In a bowl, combine the flour, baking soda, cinnamon, ginger and nutmeg. Set aside.
  3. In a large bowl, beat the butter and sugar together until well incorporated, light and airy. Add the egg and yolk, beating to combine.
  4. Add the flour mixture to the butter mixture in alternating additions with the mashed banana. I would recommend adding a third of the flour mixture, mix to combine, then add half of the mashed banana, mix to combine, then repeat (ending with the last third of the flour mixture).
  5. Add your chocolate chips and stir to distribute throughout the batter.
  6. Pour your mixture into the prepared baking tin.
  7. (Optional): For decoration on your finished loaf, you can slice the last banana lengthwise in half, taking care not to break this apart too much. Lay this on top of your batter (cut side facing up) and press down lightly so that it is firmly set on the top of the bread batter. Sprinkle a handful of chocolate chips on top.
  8. Bake in the preheated oven for about 1 hour until a toothpick inserted in the centre comes out clean. Start checking after about 45 minutes.
  9. Once baked, remove from the oven, allow to cool slightly in the pan for about 5 minutes and then carefully tip out onto a wire rack to cool completely.
