Ingredients

Banana Brownies
  • 1/2 cup butter
  • 1 2/3 cups chocolate chips semi-sweet
  • 4 egg
  • 1 2/3 cups brown sugar
  • 1 cup banana mashed
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
Peanut Butter Banana Frosting
  • 1/2 cup butter at room temperature
  • 1/2 cup peanut butter
  • 1/2 cup banana mashed
  • 1/2 teaspoon vanilla
  • pinch salt
  • 2 cups powdered sugar

Instructions

    Cup of Yum
  1. Preheat the oven to 325°F. Grease the bottom of a 9x13-inch baking dish.
  2. Place the butter in a small pan over medium-low heat. Melt completely, then add the chocolate chips. Stir until the chocolate has melted. Set aside to cool slightly.
  3. In a large bowl, beat the eggs lightly, then stir in the sugar, banana, vanilla and salt. Add the chocolate mixture and stir to combine. Add the flour and stir just until combined. Spread the batter into the prepared baking dish.
  4. Bake until a toothpick inserted in the center comes out with moist crumbs, 55-60 minutes. Cool completely.
  5. To make the frosting, beat the butter and the peanut butter together until light and fluffy. Add in the banana, vanilla and salt and beat to combine. Slowly add in the powdered sugar until completely incorporated and creamy. Spread over the top of the cooled brownies, then cut into 24 pieces.
