Banana Chocolate Chip Coffee Cake

This Banana Chocolate Chip Coffee Cake is a tasty new take on your regular banana bread. Loaded with walnuts and chocolate chips and a brown sugar cinnamon filling, this coffee cake won't let you down!

Ingredients

For Cake Batter
  • 3 cups all-purpose flour
  • 1½ teaspoon baking soda
  • 1½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup walnuts chopped
  • 1 cup bittersweet chocolate chips
  • 4 banana ripened
  • 1½ cups sour cream
  • 2 egg
  • ¾ cup applesauce
  • 1 teaspoon vanilla extract
  • 1 cup sugar
For Filling
  • ½ cup brown sugar packed
  • 2 teaspoon cinnamon ground
  • ½ cup walnuts chopped
For Glaze
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoon milk

Instructions

  1. Preheat oven and prepare cake pan: Preheat your oven to 350℉. Spray a 10 inch angel food cake pan with cooking spray. Set aside.
  2. Combine dry ingredients: In a large bowl combine the flour, baking soda, baking powder, salt, walnuts and chocolate chips.
  3. Combine wet ingredients: In another medium bowl mash the bananas using a fork or a potato masher. Add the sour cream, eggs, applesauce, vanilla extract and granulated sugar and whisk everything together.
  4. Combine wet and dry: Pour the wet ingredients into the bowl with the flour and using a spatula mix everything together.
  5. Prepare filling: In another small bowl combine all the filling ingredients together. 
  6. Assemble cake: Spread ⅓ of the batter into the prepared cake pan. Sprinkle ⅓ of the filling over the batter and repeat 2 more times to finish the rest of the batter and filling. 
  7. Bake: Place the cake pan in the oven and bake for about 1 hour or until a toothpick inserted in the center comes out clean. Cool the cake in the pan for 10 minutes then remove and continue cooling on a wire rack.
  8. Make glaze: Meanwhile, make the glaze by whisking all the ingredients together in a small bowl, adding more milk if needed. The glaze should be smooth and thin enough to drizzle.
  9. Drizzle with glaze, cut and serve: Drizzle the glaze over the cake, cut into slices and serve.

Notes

  • The applesauce could be replaced with vegetable oil, butter, or even coconut oil, if preferred.
