Ingredients
- 4 large bananas about 1 1/3 cups
- 2 cups all purpose flour
- 1/2 tsp salt
- 1 tbsp baking powder
- 2 large eggs
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup vegetable oil
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Mash the bananas, then set them aside.
- In a separate bowl, combine flour, salt, baking powder and set aside.
- In a large bowl, whisk together egg and sugar until light and fluffy.
- Fold in bananas to the egg mixture. Add vanilla and oil, then stir to combine together.
- In small parts, fold in dry ingredients until fully incorporated. Follow by adding chocolate chips.
- Line muffin pan with liners or spray each one with oil. Fill with the muffin batter. Bake at 375° for about 20-25 minutes or until the toothpick comes out clean.
- Let them rest for 5 minutes before serving. Enjoy!
