Banana Chocolate Chip Pancakes

Ingredients

  • 2 ripe bananas
  • 1 ½ cup all purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 Tablespoons sugar
  • 1 cup milk
  • 1 egg beaten
  • 2 Tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips

Instructions

  1. Mash the bananas with a fork.  Then stir in the milk, egg, vegetable oil and vanilla.
  2. Stir in the flour, baking powder, salt, ground cinnamon and sugar until combined.
  3. Mix until just combined.  The batter will be lumpy.
  4. Fold in the chocolate chips.  Then let the batter rest for approximately 5 minutes.
  5. Heat a skillet over medium high heat and spray the pan with a non-stick cooking spray.
  6. Pour the batter into the pan in approximately ¼ cup measurements.  Gently spread the batter out some.
  7. Cook for 3-4 minutes until you see bubbles start to form and burst on top of the batter.  Flip and cook the opposite side until golden brown.  Remove the pancake from the skillet to a plate.  Continue this process until all the batter is used.
  8. Serve topped with your favorite toppings and enjoy!

Notes

  • Refrigerate the leftovers in an airtight container for up to 5 days.
