Ingredients
- 1 tbsp flax meal + 3 tbsp warm water
- 1/3 cup vegetable oil 70 g
- 3/4 cup brown sugar 105 g
- 3 banana 275 g, well-mashed, medium-large
- 1 tsp vanilla extract 4 g
- 1 tsp baking powder 3 g
- 1 tsp baking soda 6 g
- 1/2 tsp salt 2.5 g
- 2 tsp ground cinnamon 4 g
- 1 1/2 cup all-purpose flour 210 g
- 1/2 cup chocolate chunks 100 g
Instructions
- Preheat oven to 350F.
- In a large bowl, combine flax meal and water. Let stand until thickened.
- Add vegetable oil, sugar, mashed bananas and vanilla extract, and mix until incorporated.
- Sift in baking powder, baking soda, salt, cinnamon and flour. Stir until just combined. Fold in chocolate chunks.
- Divide batter between a lined muffin tin. Bake for 13-15 minutes until a toothpick or cake tester comes out clean when poked through the middle. The edges should be golden and top domed. Remove from tin within a few minutes and let cool on a wire rack.
