Ingredients
- 1 loaf whole grain bread sliced, crusty
- 8 large egg
- 1 cup milk low fat
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
- 3 large banana sliced
- 1 cup walnuts (chopped)
- maple syrup (to serve (optional))
Instructions
- Spray a 9″ x 13″ Pyrex Easy Grab® Oblong Baking Dish with cooking spray and line the pan with a single layer of bread slices. Note: you may have to cut a slice in half to get most of the pan covered.
- Whisk together eggs, milk, vanilla, cinnamon, nutmeg and salt in a Pyrex® 8 Cup Measuring Cup. Pour 1/3 of the total mixture on top of the first layer of bread.
- Top egg-soaked bread layer with half of the banana slices and 1/2 cup of the chopped walnuts. Place the remaining bread slices on top then pour over the remaining egg mixture, making sure each slice is fully soaked. Sprinkle on remaining banana slices and chopped walnuts before covering baking dish with the Red Lid. Refrigerate for overnight (or at least 2 hours.)
- When you’re ready to bake, pre-heat oven to 350 degrees. Remove lid and bake for 30 minutes. Serve with maple syrup if you wish.
