Banana Nut Muffins

These delicious and easy banana muffins are the perfect breakfast for busy families on the go! A great way to use up your bananas.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas
  • 1/2 cup white sugar
  • 1/4 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/3 cup butter melted
  • 1/2 cup walnuts chopped

Instructions

  1. Preheat your oven to 350°F.
  2. Spray a 12 well muffin pan with non-stick spray, or use paper liners.
  3. Whisk together the flour, baking powder, baking soda, and salt in a small bowl and set aside.
  4. Combine the mashed bananas, white and brown sugars, egg, vanilla and melted butter in a large bowl.
  5. Mix in the flour mixture and combine until smooth., then stir in the walnuts.
  6. Bake in the preheated oven.
  7. Bake the muffins for 20-25 minutes. They muffisn are done when a toothpick inserted comes out clean and the muffin tops spring back when lightly touched.

Notes

  • If you are making mini muffins bake them for 13-15 minutes.
