Banana Nut Muffins Recipe

Spiced banana nut muffins are filled with crunchy pecans and topped with cinnamon and sugar for the perfect bite!

Ingredients

Muffins:
  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 large overripe bananas mashed
  • ½ cup sugar
  • ½ cup packed brown sugar
  • 1 egg
  • 4 tablespoons unsalted butter melted
  • ⅓ cup Chopped Pecans plus more for topping, if desired
Cinnamon Sugar Mixture (optional):
  • 1 tablespoon sugar
  • ½ teaspoon ground cinnamon
  • additional chopped pecans optional

Instructions

  1. Preheat the oven to 375°F. Line a muffin pan with 12 paper liners. Set aside.
  2. Sift flour, baking powder, baking soda, and salt together in a medium bowl. Set aside.
  3. In a separate bowl, mix together bananas, sugars, egg, melted butter, and chopped pecans.
  4. Fold in the flour mixture and stir until smooth.
  5. Divide the batter among the wells of a lined 12-cup muffin tin. Fill each well two-thirds full.
  6. For the cinnamon-sugar mixture, mix sugar and cinnamon together in a small bowl. Sprinkle over the muffins. Bake for 15-20 minutes.
