Ingredients

  • 4 bananas
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • ¼ cup chopped walnuts
  • Whipped Cream banana slices and syrup, optional

Instructions

    Cup of Yum
  1. In a large mixing bowl, beat bananas with eggs and cinnamon until fully blended. You want the mixture as smooth as possible. Fold in chopped walnuts.
  2. Heat a large skillet or griddle, and grease generously (I used coconut oil to keep these healthy). Drop batter by 1/4 cup onto hot griddle. Cook until browned on each side, flipping carefully.
  3. Serve pancakes hot with extra nuts, sliced banana and whipped cream and/or syrup if desired. ENJOY.

Notes

  • Learn how to toast walnuts for this recipe. Adds so much flavor!
  • Use homemade whipped cream as a topping if desired.
