Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1¾ cups milk
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ripe banana peeled and sliced
  • ½ cup Nutella

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, beat the eggs and then whisk in the milk, oil, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  4. Preheat your stuffed waffle maker according to the manufacturer’s instructions.
  5. Spread about 1/3 cup batter into waffle maker so bottom grids and waffle divider are thinly but completely covered. Place a few banana slices and a generous dollop of Nutella in the center, being sure to leave a margin around the edges for the batter to expand. Spread additional batter over filling until it reaches the top of the square projections on the waffle tongs.
  6. Close waffle maker and flip. Cook for 7 to 8 minutes, or until the waffle is golden brown and cooked through.
  7. Carefully remove the waffle from the maker. Let it cool for a minute, then garnish with chopped nuts and a dusting of powdered sugar, if desired.
  8. Continue with the remaining batter, banana, and Nutella until all waffles are prepared.

Notes

  • If using a non-stick waffle maker, a light spray of cooking oil before each waffle ensures effortless removal.
  • For a less sweet version, reduce the amount of Nutella or substitute with a lighter chocolate spread.
  • Experiment with different fruits such as sliced strawberries or raspberries for a tasty variation on the banana filling.
  • Serve immediately, or keep warm in a 200°F oven while preparing multiple batches.
