Ingredients

  • 1/2 cup butter *softened
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs *beaten
  • 1 teaspoon vanilla extract
  • 2 bananas *medium, mashed
  • 1 cup squash *grated
  • 2 cups flour *all-purpose
  • 1/2 teaspoon baking soda
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup nuts *chopped, optional

Instructions

  1. In a large bowl, cream the butter and sugars together.
  2. Add in the eggs, vanilla, bananas, and squash.
  3. In a separate bowl, combine the dry ingredients.
  4. Slowly stir the dry mixture into the squash mixture and stir until just combined.
  5. Add in the chopped nuts if using.
  6. Pour batter into greased, prepared loaf pan (9x5) and bake in preheated oven, 350 degrees, for about 55-60 minutes.
