Banana Waffles

These banana waffles are the perfect weekend treat! A great way to use up overripe bananas for a delicious breakfast that will thrill everyone!

Ingredients

  • 3 cups all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • Pinch of nutmeg
  • 1 1/2 cups milk
  • 1 cup ripe bananas mashed about 3
  • 3 large eggs
  • 1/3 cup oil
  • 1 1/2 teaspoons vanilla extract
Toppings
  • Whipped Cream freshly sliced bananas and syrup

Instructions

  1. In a large bowl whisk the flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg together
  2. In a large measuring cup or a medium bowl, (I prefer a nice large measuring cup) mix the milk, bananas, eggs, vegetable oil and vanilla extract.
  3. Make a well in the middle of the dry ingredients and pour the wet in. Stir until thoroughly combined.
  4. Follow the instructions of your specific waffle maker (eg, batter amount & time) to make the waffles.
  5. Ladle the batter into a preheated waffle iron and close the lid.
  6. Cook the waffles until they are golden brown and crisp.
  7. Top with whipped cream, freshly sliced bananas and syrup.

Notes

  • The yield will depend on the size of your waffle maker. This recipe doubles well!
