Basic Chocolate Zucchini bread

Ingredients

  • 3 eggs
  • 2 cups of white sugar
  • 3/4 cup vegetable oil
  • 1/2 cup of sour cream
  • 2 cups of grated zucchini
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 tablespoons cocoa
  • 3/4 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F. Grease and flour two standard loaf pans and set aside.
  2. Beat together the eggs, white sugar and oil.
  3. Stir in the sour cream and the zucchini.
  4. Whisk together the dry ingredients, then stir into the wet mixture.
  5. Once combined, stir in the chocolate chips.
  6. Divide between the two loaf pans and bake in the oven for 55-65 minutes or until a cake tester inserted into the middle comes out clean.
  7. Remove, cool in pans for 5 minutes then turn out onto baking racks to cool completely.

Notes

  • These loaves freeze exceptionally well!
