Basil and Sweet Pea Soup
This sweet pea soup was a personal favorite of mine growing up. It's simple, savory with a little sweet, and delicious.

Ingredients
- 1/4 cup butter not margarine
- 1/4 cup flour
- 3 cups milk
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon finely chopped fresh basil or 1 teaspoon dried basil
- 14 ounce can sweet peas drained
Instructions
- In a saucepan or soup pot over medium-low heat, melt the butter then stir in the flour.
- Gradually whisk in the 3 cups of milk.
- Bring heat to medium and continue to stir until the mix begins to bubble, boil, and thicken.
- Add salt, pepper, basil, and sweet peas (drained) and cook another minute or two.

Notes
- On top of each soup, garnish with a sprinkle of fresh basil leaves.
- Enjoy your soup! This recipe is about as easy as it gets-- no blender or batches here! Truly a one pot soup.
