BBQ Onion Ring Mushroom Cheddar Chicken Sandwich

The ultimate chicken sandwich recipe is loaded up with crispy onion rings, BBQ chicken, cheddar cheese and sauteed mushrooms!

Ingredients

  • 8 frozen onion rings
  • 4 chicken breasts app. 2 lbs
  • 1 cup BBQ sauce
  • 1 tbsp olive oil
  • 1 cup baby bella mushrooms sliced
  • 4 oz cheddar cheese sliced
  • 4 hamburger buns

Instructions

  1. Preheat the oven to 400°F.
  2. Place the onion rings on a baking sheet.
  3. Bake in the oven for 10 minutes, flip and continue baking for an additional 8-10 minutes.
  4. While the onion rings are baking, toss the chicken breasts in the bbq sauce.
  5. Place the bbq chicken in a cast iron skillet on the stove over medium high heat.
  6. Cook the chicken for 7-8 minutes per side.
  7. In a separate skillet, add the olive oil over medium heat.
  8. Saute the mushrooms for 5-7 minutes.
  9. Remove the mushrooms from the heat and remove the onion rings from the oven.
  10. Place ¼ cup of sauteed mushrooms and 2 onion rings on each chicken breast.
  11. Top each chicken breast with a slice of cheddar cheese.
  12. Place the skillet in the oven for 2-3 minutes, or until the cheese has melted.
  13. Place the loaded chicken breasts on hamburger buns and serve.
