BBQ Onion Ring Mushroom Cheddar Chicken Sandwich
The ultimate chicken sandwich recipe is loaded up with crispy onion rings, BBQ chicken, cheddar cheese and sauteed mushrooms!

Ingredients
- 8 frozen onion rings
- 4 chicken breasts app. 2 lbs
- 1 cup BBQ sauce
- 1 tbsp olive oil
- 1 cup baby bella mushrooms sliced
- 4 oz cheddar cheese sliced
- 4 hamburger buns
Instructions
- Preheat the oven to 400°F.
- Place the onion rings on a baking sheet.
- Bake in the oven for 10 minutes, flip and continue baking for an additional 8-10 minutes.
- While the onion rings are baking, toss the chicken breasts in the bbq sauce.
- Place the bbq chicken in a cast iron skillet on the stove over medium high heat.
- Cook the chicken for 7-8 minutes per side.
- In a separate skillet, add the olive oil over medium heat.
- Saute the mushrooms for 5-7 minutes.
- Remove the mushrooms from the heat and remove the onion rings from the oven.
- Place ¼ cup of sauteed mushrooms and 2 onion rings on each chicken breast.
- Top each chicken breast with a slice of cheddar cheese.
- Place the skillet in the oven for 2-3 minutes, or until the cheese has melted.
- Place the loaded chicken breasts on hamburger buns and serve.
