Ingredients
- 20 oz sirloin or beef whiting , cut into thin strips
- 2 tablespoons low sodium soy sauce
- 1 tablespoon Shaoxing , or cooking sherry
- 2 cloves garlic , grated
- 2 green onions (spring onions), cut into very thin slices
- 2 tablespoons neutral vegetable oil
- 2 teaspoons finely grated fresh ginger
- 1 large head broccoli , cut into florets
- 4 oz beansprouts
For the sauce
- 4 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 4 tablespoons water , or low-sodium beef broth
- 2 teaspoons brown sugar
- 2 tablespoons chinkiang (black rice vinegar)
- 2 teaspoons sesame oil
- Freshly ground white pepper
- 2 tablespoons cornstarch

Instructions
- In a large bowl, mix the beef strips and Shaoxing (or sherry). Set aside.
- In another large bowl, whisk together all the ingredients for the sauce until the cornstarch is dissolved. Set aside.
- Heat the oil in a wok over a high heat, and as soon as it begins to reach its smoke point, add the beef, and stir fry for about 2 minutes, or until lightly browned.
- Add the onion, garlic and ginger, and stir fry for another minute.
- Add the broccoli and continue to stir fry for 1 minute.
- Add the beansprouts, and stir fry for 1 minute.
- Finally, stir in the sauce, and simmer over medium heat for 2 minutes.
- Serve immediately with sautéed noodles or steamed rice.
