BEEF ENCHILADA BAKE

Ingredients

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 10 oz can red enchilada sauce
  • 1 10 oz can diced tomatoes with green chilies (drained)
  • 1 15 oz can black beans, drained and rinsed (optional)
  • 1 ½ cups shredded cheddar cheese
  • 1 ½ cups shredded Monterey jack cheese
  • 10 small flour or corn tortillas cut into halves
  • ¼ cup chopped fresh cilantro for garnish

Instructions

STEP NO.1: PREHEAT OVEN

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
STEP NO.2: COOK THE BEEF
  1. In a large skillet over medium heat, cook ground beef until browned. Add onion and garlic, cooking until softened. Drain any excess grease.
STEP NO.3: SEASON AND ADD SAUCE
  1. Stir in chili powder, cumin, paprika, salt, and black pepper. Add enchilada sauce, diced tomatoes, and black beans (if using). Simmer for 2-3 minutes.
STEP NO.4: LAYER THE CASSEROLE
  1. Spread a thin layer of the beef mixture at the bottom of the prepared baking dish.
  2. Layer tortilla halves over the beef mixture, followed by more beef and a sprinkle of cheddar and Monterey Jack cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
STEP NO.5: BAKE UNTIL GOLDEN
  1. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is melted and bubbly.
STEP NO.6: GARNISH AND SERVE
  1. Let the casserole rest for 5 minutes before slicing. Garnish with fresh cilantro and serve with sour cream.
