Beef Enchilada Casserole

Ingredients
- 1 lb ground beef
- 1 onion finely chopped, small
- 2 cloves garlic minced
- 10 oz Red Enchilada Sauce
- 4 oz green chili diced
- 15 oz black beans drained and rinsed
- 15 oz corn drained, canned
- 2 tsp chili powder
- 1 tsp cumin
- salt to taste
- black pepper to taste
- 10 corn tortillas
- 2 cups Colby jack cheese shredded
- cilantro for garnish, chopped, fresh
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- In a skillet over medium heat, cook the ground beef until browned. Add the chopped onions and garlic, cooking until softened.
- Stir in the red enchilada sauce, diced green chilies, black beans, corn, chili powder, cumin, salt, and pepper. Simmer for 5-7 minutes.
- Place a layer of corn tortillas at the bottom of the prepared baking dish.
- Spoon half of the beef mixture over the tortillas, spreading it evenly.
- Sprinkle a portion of the shredded cheese on top of the beef mixture.
- Repeat with another layer of tortillas, the remaining beef mixture, and another layer of cheese.
- Cover the casserole with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped cilantro before serving. Enjoy!
