Beef with Broccoli

A quick and easy weeknight dinner, this Beef and Broccoli is a classic for a reason! Tender beef is stir-fried with crisp-tender broccoli in a flavorful sauce. It’s a healthy and delicious meal that’s ready in no time!

Ingredients

  • 1 lb lean beef such as sirloin or flank steak, thinly sliced against the grain
  • 4 cups broccoli florets
  • 2 tbsp avocado oil or olive oil
  • 3 cloves garlic minced
  • 1- inch ginger minced or grated
  • ¼ cup soy sauce or coconut aminos
  • 2 tbsp water
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch optional, for thickening, or arrowroot powder
  • brown rice for serving, or quinoa
  • sesame seeds for garnish, sliced green onions

Instructions

  1. Marinate the Beef: In a bowl, combine the sliced beef with soy sauce (or coconut aminos), garlic, ginger, and sesame oil. Let it marinate for at least 15-30 minutes to enhance the flavor.
  2. Cook the Broccoli: In a large skillet or wok, heat 1 tablespoon of avocado oil over medium-high heat. Add the broccoli florets and stir-fry for about 3-4 minutes until they are bright green and slightly tender. Remove the broccoli from the skillet and set aside.
  3. Cook the Beef: In the same skillet, add the remaining tablespoon of avocado oil. Add the marinated beef and stir-fry for about 3-5 minutes, or until it’s browned and cooked through. If using, sprinkle the cornstarch over the beef and stir to combine, cooking for another minute until thickened.
  4. Combine Ingredients: Return the broccoli to the skillet with the beef. Add the water and stir to combine everything. Cook for an additional 2-3 minutes until the broccoli is heated through and coated in the sauce.
  5. Serve: Serve the beef and broccoli over cooked brown rice or quinoa. Garnish with sesame seeds and sliced green onions if desired. Enjoy!

Notes

  • Flank steak or sirloin works well, but you can also use ground beef or chicken for a variation.
  • Feel free to add other vegetables like bell peppers, snap peas, or carrots for extra color and nutrition.
  • Marinating the beef for longer enhances flavor, so consider doing it in the morning for a quick dinner later.
  • Use coconut aminos instead of soy sauce for a gluten-free and lower-sodium option.
