Beer Steamed Mussels

This is a great way to cook mussels, beer makes a great broth and you can match with your favourite craft beer to drink. Australian cup measurements

Ingredients

  • 1 kg mussels
  • 150 gm onion chopped
  • 40 ml olive oil
  • 150 gm Bacon rough chopped
  • 1 clove garlic
  • 1 teaspoon smoked paprika
  • 1/4 cup parsley rough chopped
  • 1 whole chilli optional, sliced
  • 250 ml beer 1 cup
  • 1 whole lemon zest

  1. Use a medium large pot with a fitting lid.
  2. Warm it and add the olive oil, garlic, bacon, smoked paprika and onion. Sweat on medium till soft and fragrant. Add the beer and bring to the boil.
  3. Put all of the mussels and the chili and parsley into the pot and add the lid. Bring the pot back to the boil and shake a couple of times. This will take about 5 minutes. With the lid off check all of the mussels. They should be open. Discard any that dont open.
  4. Put into bowls and scoop over the liquid.
